"Bolognese" is the eighth episode in the second season of the series The Bear. It aired on June 22, 2023.
Synopsis[]
The crew awaits a do or die fire suppression test.
Plot[]
As the countdown to the grand opening reaches the ten-day mark, Carmy and Sydney find themselves in a state of panic over the fire suppression test. However, amidst the chaos, Ebra returns and reconciles with Tina, agreeing to oversee the restaurant's takeout sandwich window. This reunion brings a sense of relief and stability to the team.
Meanwhile, Richie reenters the picture with a newfound sense of purpose, invigorated by his experiences away. Marcus returns from his culinary exploration in Copenhagen, armed with a delightful new dessert menu that promises to delight patrons. With Richie's return, he takes the initiative to apologize to Natalie, and together they dive into the task of interviewing potential candidates for the front-of-house team.
However, as Sydney observes the growing connection between Carmy and Claire, she begins to perceive Claire as a threat to Carmy's focus on the restaurant. This realization adds another layer of tension to the dynamic within the team.
In a surprising turn of events, Fak recollects a past conversation in which Michael had contemplated committing insurance fraud by destroying the restaurant. Realizing that Michael might have disabled the fire suppression system, Fak takes it upon himself to fix the issue just in time for the crucial test. Fortunately, The Bear successfully passes the test, granting them the official green light to open its doors to the public.
As Carmy's feelings for Claire become more apparent, he acknowledges his love for her and takes the initiative to prepare a special dinner for the two of them, signaling a new chapter in their relationship.

Trivia[]
- When Richie tells Carmy that he "get[s] it", Carmy whispers "Eleven Madison Dickhead." This is a callback to Richie's derisive "Eleven Madison Park dickhead" comment on Carmy's attire in "System", itself a reference to the fine dining restaurant in Manhattan.
