“Doors” is the third episode in the third season of the comedy drama series The Bear. It premiered on June 26, 2024, on FX and Hulu.
Synopsis[]
The staff slogs through a month of service.
Plot[]
Marcus attends his mother's funeral in a beautiful cathedral. The rest of The Bear crew are also in attendance. Marcus takes the podium to deliver a beautiful eulogy in remembrance and honor of his mother. He recalls many fond memories and personality traits. He speaks on their communication and how it felt for someone to really pay attention to him. That was special for Marcus.
Back at the Bear, Carmy notices the notepads are different. Syd made the margins bigger because he always writes in them. They prepare to open and Richie enters to see if they're ready. Syd calls "doors" and the clock starts. Carm calls out the menu to everyone. Richie and Nat tell the staff what to expect that night with reservations and events. Marcus tells the staff what he made for desert.
The crew prepares for their night. Richie takes orders which includes exclusions and allergies. Syd reads off the tickets to the chefs while Carmy prepares the dishes for table. Out in the service area, Gary struggles to open a bottle of wine.
As the days pass, Carm tells Tina to refire a steak that isn't perfect, despite the customer having waited almost a half hour. Richie gets frustrated over this and Syd decides to run a glass to make up for it. Carm continues his meticulous and precise garnishes over dishes as severs run the plates.
Meanwhile, Ebra is slammed at the Beef window, Marcus's station gets increasingly messier, and Cicero argues with Carm about the $11,000 butter bill. The kitchen runs out of teaspoons and things are a mess inside.
On a new day, Richie starts to write his own nonnegotiable for Carm which frustrates him. He rattles off his demands to Carm, who calls them a waste of time leading to another argument. He says Sugar will type it up for Richie.
It's a new day again, and Fak wheels out a pinata for a surprise - Carm hates it. Richie loves it and they shout expletives before he goes out. Carm cuts his finger chopping food and Richie drops a plate. Syd talks Tina through making one of the new menu options, giving her back some of the confidence she needed.
A new day and Fak volunteers to run a plate for Carm, who details how to present the dish. He follows the instructions to the letter - which doesn't include leaving the broth at the table. He belittles Fak and Richie intervenes to tell Fak not to serve ever again.
As the days pass at The Bear, things get increasingly hectic and busier. Syd has frustration over the lack of communication in the kitchen.
