Synopsis[]

Carmy sets a new standard.

Plot[]

Sydney gets ready for work while her dad knocks on the bathroom door. He needs to change the rules of bathroom time as he needs it now, which frustrates her as she whines over having to give it up. She brushes her teeth in the kitchen sink as her dad explains the bad wings he had the night before. She promises to bring him food from work instead. She reminds him again to take his medicine then leaves for work.

Carmy is working in The Bear meticulously preparing dishes when Ted barges in with micros. He asks Carmy to smoke with him, but he quit last night because it takes up to much time. Theo reminds him that he needs to open the beef window up or the regulars are going to riot. He recalls being in the kitchen with Carmy when they were young, which is interesting, as Carmy knew what he wanted to do and had more possibilities then Ted. He leaves as Sugar comes in, with Carmy oblivious that he doesn't respond to her greeting. She asks if he's called Richie or Claire, but he hasn't. He's hyper focused on his work and she forces him to open up a bit. She's doing shitty but it's not great 8 a.m. stuff. She's about to have a kid in a few months and wishes she could put all her baggage way. He relents that is more 4 p.m. stuff. She picks up his non-negotiables list and he insists she prints a bunch out. Cicero comes in with an attitude feeling he has a right to be there because he owns the place. He questions why Carmy is spending his money on fancy stuff. Sugar reads off the rest of the list which includes "constantly evolving" through "passion and creativity" while changing the menu everyday. He's doing this because he can't waste that much time. Cicero gives Sugar some breakfast, saying he didn't ask Carm for his order because he was in the fridge yelling at himself. He leaves as Sydney comes in. She notices her redid everything - pushing and subtracting a lot of things. Her cook was great, but he still changed everything which annoys her. He explains everything he changed and why. He'll keep changing everything everyday. He tells Sydney to sign the Docusign in her inbox that tells her how much of the restaurant she'll own. They nod at each other as she digests everything. He's doing this so they can push each other like she wants. She asks about Richie, but Carm cuts her off to tell Ebra to take the beef out of the freezer. Sugar and Sydney go over the non-negotiables and Docusign. The Computer drafted the papers, so Sugar tells Sydney to get a lawyer to look at it, explaining the Computer is a person - Nicholas Marshall. They suggest she talk to Pete about being a lawyer. Richie comes in and things are tense in the kitchen instantly.

Richie asks Syd if he's seen her iron and then asks her to relay a message to Carmen, who is standing right next to her. The boys continue this game of messenger until they end up arguing over the table instead. Sydney suggests they both stop because she doesn't like this. Richie calls Carm a "baby replicant who's not self-actualized", blaming this for why Carm repeatedly called him a loser. Carm tries again to apologize but Richie isn't listening. They continue arguing as Richie lays down that what happens "out there" is his "dojo" and he won't tolerate anyone changing shit. They scream expletives at each other until Sydney intervenes again. The lights flicker which make her things she's a having a stroke, though a reappeared and annoyed Sugar confirms it's just the lights. Richie has the Faks on the way - lead two but less than five - to fix the electricity. He tells Syd there are nine Faks. Sydney tells Richie to run everything by her from now on and not Carm. He spots the non-negotiables and is deeply displeased with what he says. Carm starts to be snarky until she silences him. The boys continue to snipe over each other "getting fucked". Richie calls some of the list bullshit. Carm refuses to let Syd call them goals because they are non-negotiable. He asks if she doesn't think he can do it and she chuckles sarcastically. She thinks he can miraculously make this about himself and is getting a migraine. The Faks arrive with Fak finding out about the non-negotiables. He picks up on the weird vibe and shouts for Nat, who tells him not to be scared. He wonders why they're always so mad then walks off with a sample.

Richie sees the timestamped tape labels on all the vegetables and starts ripping into Carmy about them as Sydney struggles to focus on the dishes in front of her. Tina comes in and greets everyone as Richie mocks Carmy's apology voicemail. As things escalate again, Fak shouts for them to knock it off as it's scaring him. Tina questions the daily menu changes and thinks it's a bit crazy. Sydney gives Tina the farmers market duty, which makes her happy, and she fist-bumps Richie. Fak worries about learning a new menu everyday. He thinks it's a bit crazy which is a sore word for Carmy who insists he's not crazy. Richie cruelly tells Fak to ask Claire if Carmy is crazy, earning dark glares from Carm and Syd. Ted saw Claire Bear the other day as a friend's, not understanding the big deal around things. Ted explains everyone is good and everyone else is good with Claire except Carm who is "dusted". The light bar falls from the ceiling and onto the table. Tina asks what Carm said to Claire but he doesn't remember. Cicero hears this part and Sydney explains they're talking about Claire. He confronts Carm about what he did. Gary comes in as everyone tries to figure out what happened with Claire. Sydney brings the conversation to Marcus, who Carmy has been trying to get in touch with. Gary explains to Cicero that Claire overheard Carm talking in the fridge, and they're trying to figure out what he said. He knows about the incident because of the group chat. Carm admits he might have said their relationship was a waste of time because he "is who he is". Richie wants to get work down and Carm accidentally agrees, so they explode into another argument. Sugar puts a cork in it to share that Daniela, Connor, Joey, and Amy all quit because they didn't want to work in a "dysfunctional kitchen". Cicero walks off as Gary confirms to Sugar that he's ready for class. Richie and Carmy start saying the same thing at the same time, prompting another heated argument. Gary is going to wine school at the Quarter Master. Fak wants to go too, but everyone reminds him that he's allergic to grapes and doesn't like wine. Cicero comes through the kitchen with a giant box, refusing to say what it is. Sugar reminds them they have to make a choice of whether or not to include a service charge or tip. Carm decides on having a tip system instead. Sugar relays that Fransy Fak made a reservation which Ted and Fak try to encourage as she wanted to come. Sugar snaps that she can get fucked. Richie tells Sydney his disapproval of tipping in general. He doesn't agree with paying someone based on their performance. Marcus opens the kitchen door and everyone is silent. He just wants to work, be there with them, and not think for a second. He picks up the non-negotiables list and looks them over as Syd gets everyone going with their day work.

Carm talks to Marcus in private about the list. It doesn't look crazy to Marcus. Carm understands that Marcus doesn't want to talk about what he's going through, but some of them know what he's feeling. He suggests Marcus try to deal with it instead of ignoring the feelings, which is the opposite of what Carm did. He's there for Marcus if he needs anything. Marcus was at the kitchen when his mom died, which makes Carm feels terrible. Marcus thinks it was a good thing and how things were supposed to be. She wanted Marcus to be with them. This place has gotta work and he needs Carmy to "take us there, Bear." Carmy replies with a "yes, Chef."
